OUR STORY
A proper butcher's shop, run by people who care where it comes from.
Charlie started on the block at sixteen and spent ten years learning the trade in some of the county's best shops before opening Fallow & Flint in the old village forge. The idea was simple: buy whole animals from farmers we trust, take our time with them, and send every customer home knowing exactly what they've got and how to cook it.
No vacuum-packed mystery cuts. No guessing. Just honest meat, a friendly face behind the counter and as much advice as you'd like (whether that's how long to rest a rib or what on earth to do with a bavette).

Dry-aged beef
Lincoln Red rib, sirloin, rump and fillet, aged 35 days or more on the bone.
Rare-breed pork
Outdoor-reared Gloucester Old Spot, from chops to whole shoulders for slow roasting.
Lamb & hogget
Spring lamb in season, richer hogget through the winter. Racks, legs and shanks.
Poultry & game
Free-range chicken and duck all year, with venison, pheasant and partridge in season.
Sausages & bacon
Made in-house every morning, including our Lincolnshire sausage and dry-cured streaky.
BBQ & sharing cuts
Tomahawks, picanha, featherblade and short rib for the big occasions.
THE AGEING ROOM
Flavour you can't rush.
Behind the counter sits our salt-lined ageing chamber, where beef hangs on the bone in carefully controlled cold air. Over weeks, moisture slowly leaves the meat, the flavour deepens and the texture becomes beautifully tender. It's the single biggest difference between our steaks and a supermarket's.
